The Lake District is the perfect playground for the summer holidays

Wine of the Month from Lake District Hotels Master Sommelier …

So we come to our 2nd month of Wines of the Month with our very own Master Sommelier, Stephen Wilcock will describe two new Wines that he thinks are perfect for the time of year.

These wines can be found in Borrowdale Hotel wine cellar and tasting room which glass fronted doors that entice you in from the dining room. The cellar beautifully displays the wine and champagne collection in rich wooden racking that’s skilfully lit to highlight key bottles.

The judges at the Concours des Vins du Sud-Ouest found that Château Bellevue la Foret “Best Winemaker in Fronton 2010” winning five medals including the top award.

We most certainly agree and we sell a red and a rose from this property in Fronton close to Toulouse, situated between the Garonne and Tarn rivers, An area of France that has long hot days of sunshine to ripen the grapes. The presence of iron and quartz in this poor and gravelly soil brings out characteristics specific to the Négrette grape variety : aromas of violet and berries (black berry, cherry and black currant). A genuine, unique wine, boasting its terroir of origin.

The Rose Wine is made from 65% Négrette, 20% Gamay, 15% Syrah.
The unique Négrette variety appeared during the 12th century under the name, “Mavro” (black in Greek), when it was brought back from Cyprus by the knights of  the order of Saint-Jean of Jerusalem. Capricious, it only acclimatised to the terroir of Fronton; Négrette is one of the few varieties producing wines with the same aromas as those expressed when tasting the ripened fruit. Salmon colour with blue translucent tints. A ripe nose of strawberries and red currants, tarragon with hint of lemon and candy. A crunchy mouthfeel well balanced between vivacious and mellow with a fine pepper finish.

The full bodied Red Wine is made from 50% Négrette, 20% Cabernet Sauvignon, 15% Cabernet Franc and 15% Syrah.
A dense ruby colour. Fresh and intensely fruity bouquet of prune & black & blue berries with cacao bean and black pepper. A liquorish mouthful of black fruits, a floral touch, altogether fresh and crunchy with a good depth and well balanced acidity & alcohol. The freshness lasts a long time.

New Head Chef with flair and passion at the Borrowdale Hotel …

We are pleased to introduce Nigel Harper our new Head Chef – he has set his sights on a rosette for the Borrowdale Hotel restaurant. Nigel has spent many years developing his skills just down the road at the Lodore Falls Hotel under the tutelage of Head Chef Mike Ward. It is very rewarding to see someone progress so well. 

Nigel has developed a real passion for traditional English dishes with a creative twist, and the restaurant’s famous carving trolley, local cheeseboard and unique silver service are still key favorites. Hosting the prestigious Cumbria Life Dining Club last month Nigel excelled and local celebrity chef John Crouch concluded “The dishes were very flavorsome because Nigel’s menu let those flavours shine – everyone really enjoyed it. He is a skilled young chef with a great potential.”

Head Chef is a radio superstar

Head Chef Mike Ward first appeared on BBC Radio Cumbria to talk about the monthly Pudding Evenings held at the Lodore Falls Hotel. If you are a pudding lover, the second Thursday every month is just the night to have dinner in the restaurant – there are seven delicious puddings to choose from! 

Following his first appearance Mike built up quite a listener fan base and has a monthly pudding slot on the morning show. His choice of pudding is interesting and he always picks one that his audience will be able to make at home.

Lakeside lunch with Cumbria Life

The Inn on the Lake at Glenridding hosted a Lakeside Luncheon for Cumbria Life earlier this month. The weather was glorious and the cherry trees were in full bloom, welcoming guests as they arrive.

 It was a fantastic opportunity for Head Chef Frazer Souter to produce a wonderful Lakeland lunch for these discerning diners. It was great to see people come to the lunch from far and wide – a couple travelled from north of Stirling to stay in the Lakes and attend the luncheon – they loved it and plan to return again to stay at the Inn on the Lake.

Richard Eccles – Editor of Cumbria Life concluded “I can’t think of a better dining room view.”

The menu was accompanied by a different wine with each course, carefully selected by Stephen Wilcock, Master Sommelier for the Lake District Hotel Group and himself, General Manager of the Borrowdale Hotel.

Head Chef Frazer began by saying “We are fortunate to live in the breadbasket of England with so many free range meats and locally grown produce. We are now also landing seafood locally – catching it before it goes abroad.”

Duck egg with Grilled asparagus – eggs from Carlisle and the freshest new season asparagus – two weeks early this year.  The other starter was Crab croquettes – locally caught and beautifully presented.

Main course of spring lamb was accompanied by the most delicious aubergine, tomato and goats cheese tian – I have never before had goats cheese with lamb – but it woks very well.

Frazer told us that there are over 15 different breeds of lamb farmed in the Lake District – this was certainly a very tasty one.

Fish lovers enjoyed the Sea Bream – caught from the Irish seas and landed at Millom.

Dessert was also delightful – a warm rhubarb and ginger crumble melted in the mouth and was followed by home made chocolates and coffee.

On September 14th, the  Inn on the Lake will be playing host to a luncheon and fashion show from Maureen Cookson at Whalley.  Last year tickets for this event sold very quickly – especially with an offer of a free place when you book a table of ten!
