Autumn-inspired Toffee Apple Cake

Autumn inspired cake

Join us at one of our seven Lake District Hotels to indulge in this deliciously moist and tasty autumn-inspired cake… it’s a winner following an afternoon walk in the fresh air. Sit down by the fire with a cup of something hot and a slice of toffee apple cake and enjoy with custard for extra indulgence!

Ingredients

115g/4oz self-raising flour, plus extra for dusting
115g/4oz self-raising wholemeal flour
100g/3½oz soft dark brown sugar
1 tsp baking powder
2 tsp ground cinnamon
5 tbsp sunflower oil
5 tbsp milk
2 free-range eggs
2 eating apples, peeled, cored & chopped into 5mm cubes
50g/2oz toffee, broken into small pieces

Method

1. Preheat the oven to 180C/350F/Gas 4.
2. Butter a 1.2 litres/2 pint heatproof bowl and dust the inside with flour. 
3. In a bowl, mix the flour, brown sugar, baking powder and cinnamon together.
 
4. In a separate bowl, beat together the oil, milk and eggs. Pour this onto the dry ingredients and stir to combine.
 
5. Fold in the apple and toffee pieces.
6. Pour into the prepared heatproof bowl and bake for 50-60 minutes.
 
7. Test the cake is cooked through by inserting a skewer into the centre, if it is cooked it will come out clean.
8. Leave in the dish to cool for 10 minutes then turn the cake out.
 
9. Leave to cool completely and serve with custard or extra toffee sauce.

You can always add pecans to the mixture when you add the apple and toffee for a bit of extra crunch!
