January Recipe of the Month

January’s ‘Recipe of the Month’ comes from the Inn on the Lake and is an ideal starter for a cold winter’s day… soups are a great way to stay warm during the cold season, and this soup is smooth and delicious.

Winter Warmer… Parsnip Soup

Ingredients:

  • 8 Parsnips
  • 1 onion
  • 2 cloves of garlic
  • 1tsp ginger
  • 1stp ground coriander
  • 1tsp ground cumin
  • ½ tsp crushed chillies
  • 800ml vegetable stock
  • 100g butter
  • 200ml cream
  • Salt & pepper

 

Method:

Peel and slice the onion and garlic, and in a medium sauce pan sweat off the onion and garlic in a little bit of vegetable oil.

Peel the parsnip’s and chop into rough 5cm pieces, add to the pan with the onions and garlic, and add all the spices and butter. Allow to sweat off for a further 15-20 minutes, stirring occasionally to stop it catching on the pan. Add the vegetable stock and cream and allow to simmer for a further 30minutes.

Finally blitz the soup in a food processer until smooth and season to taste with the salt and pepper.
