Poached Melon, Mint, Nuts, Passion Fruit and Sorbet

Poached Melon, Mint, Nuts, Passion Fruit and Sorbet

Ingredients

  • 1 watermelon
  • 1 honeydew melon
  • 1 cantaloupe melon
  • 2 passion fruits
  • 500g passion fruit puree
  • 250g sugar
  • 500ml water
  • 4 leaves of mint
  • 5oz icing sugar
  • 4oz plain flour
  • 3 egg whites
  • 4oz melted butter
  • 50g mixed chopped nuts

 

Method

1.
Place sugar and water in a pan and heat up to 100*c, take off heat. Using a melon baller, add the melons and poach for 2 minutes, cool down and put to the side.

To make the passion fruit sorbet, add 500ml of passion fruit puree to a container and 500ml of poaching liquid, stir and then freeze.

To make the Tuile biscuit, add 5oz icing sugar, 4oz plain flour, 3 egg whites and 4oz of melted butter, mix and place into fridge for 3 hours.

Put 4 tsp of the mixture spaced apart onto non-stick paper, spread it a little, using the back of the spoon sprinkle the chopped nuts on and bake for 9-10 minutes, take off with a palette knife to cool, cook the rest in batches, and cool.

Serve with a garnish of fresh mint.
