Guest Chef returns to The Academy

Eddie Kilty, Head Chef of the 2 AA Rosette Inn on the Lake hotel by Lake Ullswater in the Lake District is returning to his training ground, The City of Liverpool College, to host a pop-up restaurant on Wednesday 11 June.

Working with The Academy’s students, Eddie plans to produce a 5 course taster menu for the pop-up restaurant, which is inspired by much of the North West region, with a focus on modern artistry, creative cooking and an inspiring approach to contrasting textures and flavours.

Eddie plans to add Cumbrian inspiration to his menu, based on reasonable and re-invented food. Eddie says, “When cooking I use modern, molecular techniques and source as many local ingredients as possible, to produce dishes that are rich in creativity, full of flavour and beautifully presented. I take classic dishes, with natural flavours and add a modern twist to them, simplicity and beauty is the target… I let the food do the talking”

For the last six months Eddie has been working alongside the college, with students that are enrolled on the same course that he attended 11 years ago. Eddie has given students the opportunity to work alongside him at the Inn on the Lake, to help further their skills and to gain valuable experience.

Eddie says, “If students want to be successful, they need to feel passionate about wanting to achieve their best. Experience is the key, from growing up in Liverpool and having faced those same challenges that are ahead of these students, I know how difficult it can be to get a job in a Rosette restaurant, without any experience. Therefore, my aim is to back the students of the future in hospitality, by offering essential work experience in a commercially-run environment, as well as a valuable insight into the demanding aspects of these challenging occupations”

The event is being sponsored by some of Eddie’s nominated suppliers whom he purchases from on a daily basis including Pioneer Food Service, Brougham Hall Foods, C & G Neve and  Caterite Food Service.

The 5 course tasting menu and including half bottle of wine is £30:00 per person.
