Chocolate and Orange Tart with Cranberry Compote and Crispy Puff Pastry
Ingredients – Chocolate & Orange Tart
150ml semi skimmed milk
250ml double cream
1 cardamom pods
1 oranges (juice & zest)
2 eggs
400g chocolate
75g caster sugar
Ingredients – Cranberry Compote
200g dried cranberries
100ml cranberry juice
200ml orange juice
50g caster sugar
Ingredients – Puff Pastry
200g puff pastry
Egg wash
Icing sugar
Method
Bring the cream, milk, sugar, cardamom & orange to the boil. Pour the mixture over the chocolate and whisk in the eggs, and then cook at 115c for 40 minutes. Take out and leave to cool fully.
For the compote cover the cranberries with sugar and then juices then simmer until most of the liquid is gone.
Roll out the puff pastry to 3mm thickness and coat with egg wash and icing sugar (plenty) and bake between two trays at 180c for 10-15 minutes or until golden brown.
